Healthy and Yummy Roasted Eggplant dish with touch of Indian spices and flavors.

This is a eggplant dish prepared in most of Indian household as part of lunch/dinner and relished with Chapati/Rotis/Indian Bread. A must try dish.

Roasted Eggplant Indian Dish
Ingredients

Black Brinjal/Eggplant - 1 medium sized
Oil - 1 tablespoon
Onion - 1 medium sized square-diced
Green Chillies - 3 medium spicy. Adjust this as per your tolerance
Garlic Cloves - 3 medium sized
Cumin Powder - 1/2 teaspoon
Coriander Leaves - handful, finely chopped
Salt as per taste
Lemon Juice - 1/2 teaspoon
Asafoetida Powder - 1 pinch
Steps to Cook
Thoroughly wash the brinjal/egglant and pat it dry.
Slit it vertically at 4 sides. **Ensure, you don't cut the eggplant in pieces.
Insert green chillies inside the 2 slitted part in the eggplant.
Insert garlic cloves in other 2 slitted part.
Massage oil on the skin of eggplant. Add few drops of oil in all the slits.

6. On the gas and place the eggplant on flame. Start roasting the eggplant.
7. Keep tossing the eggplant to roast evenly. **Take care of the top and bottom curved part of the eggplant.
8. Once the skin starts to become scaly, (skin becomes greyish and chipped) turn of the flame.
9. Allow the eggplant to cool on a plate.

10. Remove the chillies and garlic from the eggplant, add some coriander leaves and roughly crush them to form coarse paste. **This is how Indian Kharda is made.

11. Feel off the skin from eggplant, and cut off the stem. Roughly mash the eggplant flesh + chopped spring onions with knuckles/.fork.

12. Take a pan, add oil.
13. Once oil is hot, add onion and sauté till onion is translucent.
14. Add the chilly + garlic paste (Kharda - step 10) and sauté.
15. Add salt, cumin powder and asafoetida powder. Mix well.

16. Add the eggplant flesh and mix thoroughly.
17. Cover with lid and cook it for 10 mins on lowest flame.
18. Garnish with coriander before serving.
